1 cup shortening
3/4 cup sugar
3/4 cup brown sugar
2 eggs
2 tsp hot water
1 tsp vanilla
2 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1 1/2 cups chocolate chips
Preheat oven to 350°F. Cream shortening and sugars until light and fluffy. Add the eggs, one at a time, mixing well between each egg. Add hot water and vanilla. Add dry ingredients and mix until combined. Mix in chocolate chips. Drop by tablespoonfuls onto a parchment lined baking sheet. Bake for 10-12 minutes or until the edges begin to turn golden brown. Cool slightly on the pan, then transfer to a wire rack to completely cool. Yields 4 dozen cookies.
